Job Description Job Description Overview The Food Hall Manager is responsible for upholding the Core Values and Disciplines of the Company, setting a high standard within the restaurant by leading through example. This role ensures the effective management of culinary operations and requires a thorough understanding of all Company policies, procedures, and operating standards. Operational Compliance and Management The Food Hall Manager ensures compliance with operational standards, Company policies, and all applicable federal, state, and local laws and ordinances. They oversee the inventory, purchasing, receiving, and storage of Company-specified products, maintaining accurate control of resources. Food Quality and Menu Management Supervising the quality of food preparation is a key responsibility, including monitoring limited time offers (LTOs), raw product specifications, and adherence to Company standards. The Manager is responsible for training staff on new menus, products, and promotions, while ensuring that all operations manuals, recipes, and specification books are up to date and maintained. Inventory Control Daily inventory management includes tracking PARS, on-hand portion counts, and ordering needs, utilizing the FIFO (first in, first out) method. The Manager records prep production sheets for all shifts and monitors product usage and inventory velocity for each station. Catering orders are managed to ensure both inventory and guest orders are completed accurately and cost-effectively. Recipe Adherence and Portion Control The Manager ensures that recipes are followed precisely, with portion control tools used by all team members. This maintains consistency and helps manage cost. Cleaning and Supply Management Daily, weekly, and monthly cleaning tasks are assigned to team members, with follow-up to ensure tasks are completed properly. The Food Hall Manager tracks paper supplies, food supplies, and kitchen linens to maintain budgeted food cost percentages. Labor and Scheduling Labor is scheduled according to designated budgets, with a goal of maintaining a weekly labor cost of 15% or better. The Manager develops team schedules to ensure the right talent is present for every shift and regularly meets with the Back of House (BOH) team. Unnecessary labor is reduced by adjusting staffing based on sales trends. Sales Analysis Weekly reviews of the P-Mix in the POS system are conducted to analyze product sales, consulting with the owner about performance and trends. Team Environment and Development The Manager ensures a harassment-free environment by maintaining open communication with all team members and addressing concerns promptly. Company direction is clearly communicated, and guest complaints are resolved in a manner that fosters brand loyalty. The Manager trains, coaches, and counsels team members to support their professional growth. Professional Standards and Safety Maintaining a professional image for the restaurant and team members is crucial, including proper uniforms and appearance standards. Safety and security standards are always upheld, with the Manager hiring, supervising, developing, and, when necessary, terminating team members. Security of the restaurant and its contents is also a priority. Cleanliness and Orderliness The Food Hall Manager monitors and maintains the cleanliness and orderliness of the entire stall, including both the front and back areas, ensuring a welcoming and safe environment for guests and staff.
