Fine-dining Restaurant Manager

Key Responsibilities: Leadership & Team Management: Lead, mentor, and develop a team of front-of-house staff, including servers, sommeliers, and hosts. Conduct regular training to maintain a high level of service excellence. Guest Experience: Ensure each guest receives personalized and exceptional service, attending to their needs and exceeding their expectations. Handle guest inquiries, concerns, and feedback in a professional and prompt manner. Operational Management: Oversee day-to-day restaurant operations, ensuring smooth service flow, adherence to health and safety standards, and efficient use of resources. Maintain inventory and order supplies as needed. Wine & Food Pairing Expertise: Collaborate closely with our Executive Chef and Sommelier to deliver curated wine pairings that complement the dishes on our seasonal menu. Demonstrate extensive wine knowledge to enhance guest experiences. Financial Oversight: Manage budgets, analyze sales trends, and ensure the profitability of the restaurant. Implement cost-saving strategies while maintaining high-quality service and products. Events & Special Functions: Coordinate private events, wine dinners, and special functions hosted at the estate, ensuring seamless execution and a memorable experience for guests. Qualifications & Skills: Experience: Minimum of 5 years of experience in fine dining restaurant management, with at least 2 years in a senior management role. Wine Knowledge: In-depth knowledge of South African wines and wine pairings; WSET certification or equivalent is highly preferred. Leadership: Strong leadership and team-building skills with a hands-on approach. Ability to inspire and motivate staff while fostering a positive work environment. Attention to Detail: Exceptional organizational and multitasking abilities with a keen eye for detail. Communication Skills: Excellent verbal and written communication skills, with a customer-centric approach.
