Head Chef – Chechos Wollongong Location: Wollongong, NSW Employment Type: Full-Time Chechos is expanding! We’re bringing our contemporary take on Mexican cuisine to Wollongong, opening our second location with a brand-new kitchen and plenty of room for growth. We’re on the lookout for a passionate and experienced Head Chef to lead our kitchen team and maintain the high standards that define our brand. About the Role: As Head Chef, you’ll be responsible for overseeing the daily operations of the kitchen, ensuring smooth service, maintaining quality control, and leading a dedicated team. This role is all about execution—our menu is already established, so your focus will be on delivering consistency, efficiency, and excellence in every dish. Key Responsibilities: Kitchen Leadership: Manage and mentor the kitchen team, fostering a positive and productive work environment. Quality Control: Ensure all dishes are prepared to the highest standard, maintaining consistency in taste, presentation, and portioning. Stock & Ordering: Oversee inventory, place orders with suppliers, and control stock levels to minimize waste and maintain cost efficiency. Compliance & Safety: Ensure the kitchen meets all food safety, hygiene, and WHS regulations. Service Efficiency: Work closely with front-of-house staff to maintain seamless communication and smooth service, especially during peak periods. Staff Training & Rostering: Train and develop kitchen staff, manage rosters, and ensure adequate coverage for all shifts. Cost & Waste Management: Monitor food and labor costs, implement waste reduction strategies, and work within set budgets. Equipment & Maintenance: Oversee the maintenance and cleanliness of the brand-new kitchen, ensuring all equipment is well cared for. What We’re Looking For: Proven experience as a Head Chef or Senior Sous Chef in a fast-paced restaurant environment. Strong leadership and team management skills. A passion for contemporary Mexican cuisine and delivering an exceptional dining experience. Excellent organizational and time-management abilities. Ability to work well under pressure while maintaining high standards. Strong understanding of food safety and compliance requirements. A hands-on, proactive approach with a keen eye for detail.
