Pino's Trattoria situated in one of Victoria's premium holiday & tourist destination, Phillip Island. We are seeking an experienced Head Chef to join our motivated, passionate & well established kitchen Team. We are an owner operator business open 7 days a week with strong focus on customer service & quality produce. This is a hands on position that does not come up very often and is suited for someone looking for longevity & stability in their career. We require; excellent Italian food knowledge and be able to bring a rustic yet modern take to menu creation in collaboration with owner. Confident stove/pan experience is essential as this is a fast-paced restaurant and being able to be hands on is imperative along with high volume. a leader that can bring their maturity and management experience to the position and can ensure the kitchen operates to optimun effieciency menu creation, developing, driving, and inspiring a team of chefs. We are looking for someone that has head chef experience, can hold their own in a busy service, being hands on, while staying professional, composed, supportive and engaged with the team. Experience as Head Chef in a high volume a la carte restaurant and or hotel (200 seat restaurant) Deliver high quality dishes, consistently well, in a fast-paced, busy environment customer focused Excellent attention to detail- is systems driven Experience with Italian cuisine /knowledge Leadership skills and effective management & communication of diverse team Managing & maintaining our existing food safety plan including documentation Rostering via deputy Maintain COGs Ordering & maintaining effective relationship with suppliers Monitor & supervise OH&S & food standards & procedures Understanding of financial budgets, food & labour costs Outstanding time management for preparation & service periods Calm & composed demeanour Positive attitude and ability to thrive under pressure Full time position will require the availability to work a flexible roster- including weekends & evenings, public holidays A great career opportunity awaits you!
