Franca’s Ristorante, an Italian restaurant offering daily changing menus utilizing the regions best produce & classic Italian cooking techniques from handmade pasta, sourdough pizza’s, pasta sauces & gelato. Franca's is an exciting new restaurant, part of the newly redeveloped Bayside Geelong Hotel & Apartments. As we continue to grow, we seek a dynamic Head chef to join our team and oversee the day-to-day operations of Franca’s Kitchen. Bayside Geelong Hotel & Apartments: We aim to be peoples first choice for accommodation in Geelong. We do not take our waterfront location for granted though. Currently undergoing a transformation, Bayside Geelong Hotel & Apartments is due to open its new build rooms, restaurant and bar, conferencing, and guest facilities in Aug 2025. When complete Bayside Geelong will offer 110 guest rooms including a mix of 1 and 2 bedroom self-contained and studio apartments, Superior rooms, and an industry leading number of accessible rooms. The hotel will also include multiple conference and event spaces, an indoor pool, sauna and fitness centre. The property will boast 2 restaurants and bars, Franca's Ristorante will be the first to open in August 2025. The second, our Flagship Restaurant will open September 2026. Responsibilities: Some of the key responsibilities include: Implementation of daily menus for Franca’s Ristorante Preparation and delivery of our Conference and Events food offering Recruitment, development and management of the kitchen brigade Achieving monthly targets and key performance indicators Work collaboratively with the F&B manager, Conference sales and service teams Ensure all kitchens exceed Health & Safety standards Qualifications: Chef qualification / Certificate III or IV in Commercial Cookery Australian Safe Food Handling Practices Certificate First aid certificate - Valid Fire Warden Training - Desirable Police Clearance – Valid Do food safely All about allergens Experience: Minimum 5 years’ experience developed through the ranks of Commis Chef, Demi Chef then Chef de Partie Rostering experience working with the Hospitality Industry (General) Award 2020 - Desirable Skills and Knowledge: Demonstrated knowledge of European, Italian & Southern Mediterranean food culture & cooking techniques Demonstrated Customer service excellence Excellent verbal and written communication Working knowledge of the Australian Modern Award Excellent leadership, management and delegation skills Organizational and time management skills Well-developed negotiation skills Demonstrated knowledge of menu costings Intermediate Microsoft 365 and Outlook Benefits we offer: A competitive salary Onsite parking Discounts across our hotel network Collaborative working environment in a small team As an independently owned and operated hotel, we have the freedom to innovate and implement new ideas quickly and easily If this role sounds like your next career step, please apply with your cover letter and CV.
