Head Chef – £70–80k Package – Soho, London Immediate start available / up to 4 weeks' notice considered We’re hiring a world-class Head Chef to lead the launch and kitchen operations of a major new Japanese restaurant opening in the heart of Soho. With 140 covers, an open-plan kitchen, and a bold approach to ingredient-led cooking, this is one of London’s most exciting new restaurant openings. The concept is rooted in fire, seasonality, and Japanese techniques with global influence. The menu is designed to be premium yet accessible, with a focus on flavour, precision, and execution. You’ll be responsible for: Leading a large kitchen team in a high-volume, 7-day operation Developing a vibrant menu combining classic Japanese methods with international creativity Driving standards across sushi, robata, and the main kitchen Working with senior leadership to shape systems, structure, and culture Managing ordering, cost control, compliance, prep, and service Supporting group-level R&D and mentoring future leaders We’re looking for a Head Chef with: Proven experience at the top end of Japanese cuisine in London, Tokyo, or New York Strong knowledge of robata, sushi, and Japanese cooking fundamentals Confident, composed leadership with a passion for building and developing teams Operational excellence and a focus on consistency and speed Ambition to grow with a brand that plans to scale in London and beyond If you’re looking to take ownership of a serious kitchen and lead something truly special, apply confidentially to learn more.
